Beet and Apple Salad

Beets are officially in season in North Carolina! If you’ve ever struggled on deciding what to do with this plant/vegetable, then this blog is for you. Beets are a popular root plant/vegetable which can be used in a variety of ways. Beets are a vegetable that can be boiled or served cold. Like any other root plant/vegetable, they should be scrubbed well before consuming and typically last a few weeks in the refrigerator. Beets can also be found canned at your local grocery store. Here are some ways beets can be prepared:

  1. Baked
  2. Eat the leaves
  3. Juiced
  4. Soup
  5. Stir-fry
  6. Microwaved
  7. Beet kabob

Kitchen tools required:

  • Grater
  • Spatula or spoon
  • 2 bowls
  • Vegetable Peeler

Ingredients (Serves 8):                                  

  • 1 large beet
  • 4 apples
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • Salt to taste

Directions

  1. Wash the beet and peel if desired.
  2. Grate the beet and the apples into a large bowl.
  3. For the dressing, mix the lemon juice, honey and salt.
  4. Pour the dressing over the grated beet and apples. Mix well.
  5. Serve chilled.
