Game Day Favorites

It’s everyone’s favorite time of year! Super Bowl Sunday is just around the corner and the menu has been planned. Super Bowl 56’s game day will consist of oven bake “fried” pickles and cauliflower bites. These are two alternatives to traditional chicken wings and fried pickles. We used the recipes below for inspiration and can’t wait for game day deliciousness!

Oven Roasted Cauliflower

Ingredients:

  • 1 medium cauliflower, sliced in small florets
  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter, melted
  • ½ tsp garlic powder
  • ½ tsp salt, or to taste
  • ¼ tsp ground paprika
  • ¼ tsp ground paprika
  • ¼ tsp ground pepper, or to taste

Directions:

  1. Preheat the oven to 425° and line a baking sheet with parchment paper (can substitute with aluminum foil)
  2. Slice the head of cauliflower into ½ inch thick steaks, breaking up wedges into bite sized pieces.
  3. Add the cauliflower to the center of the baking sheet. Drizzle with oil al melted butter. Toss to combine.
  4. Combine garlic powder, salt, paprika, and pepper for the seasoning. Sprinkle cauliflower and toss to coat.
  5. Spread the cauliflower evenly on the baking sheet and bake at 425° for 15-20 minutes. Remove once desired crispiness is obtained.

Add buffalo sauce as a replacement for buffalo wings or dip the roasted cauliflower bites in tobacco sauce.

The second recipe for game day is Oven Fried Pickles. Ditch the stovetop and grease for the oven and breadcrumbs.

Oven Baked “Fried” Pickles

Ingredients:

  • ¾ cup panko breadcrumbs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon chili powder
  • ¾ teaspoon garlic powder
  • Pinch of black pepper
  • 2 egg whites
  • 1 teaspoon hot sauce
  • 1 (16 ox) jar of hamburger dill pickle chips

Instructions:

  1. Spread the panko crumbs across a dry skillet and bring over medium heat. Heat for 2-4 minutes, stirring occasionally, until bread crumbs turn golden. Remove breadcrumbs to a shallow dish.
  2. In a separate shallow dish, mix together the flour, chili powder, garlic powder, and black pepper until combined. In a third shallow dish, whisk the egg whites until beaten. Whisk in hot sauce and combine.
  3. Place an oven-safe cooling rack onto a baking sheet. Mist lightly with cooking spray. Make sure you have an oven rack in the center of your oven and set the oven to broil.
  4. Drain the pickles and lay them on a surface to pat dry with a paper towel. Coat each pickle in the flour mixture, then the egg wash, finally the panko crumbs. Place fully coated pickles on the cooling rack. (Each pickle should be fully coated on all sides).
  5. Once all pickles are on the cooling rack, lightly mist them with cooking spray and place in the oven. Broil for 4 minutes.
  6. Remove the baking sheet from the oven. Flip each pickle chip to the other and return to the oven for 3-4 minutes.
  7. Once the pickles are heated through and crumb crust is golden brown and crunchy, remove from the oven. Enjoy!

Pair with your choice of dressing, hot sauce, or eat them oven “fried” pickles plain.
